Auricchio Provolone Piccante (Sharp Provolone) is world-famous and easily recognizable from the red marks on the rind. It has a beautiful gold color and wonderful texture. The Aurrichio company originated in the Campagnia region of Italy in the late 19th century.

Provolone cheese is categorized as "pasta filata" due to the stretching and pulling technique used in the cheese-making process. After forming, provolone is brined, roped, and then hung to age.
