Our whole milk ricotta cheese is very low in moisture content. Whey is a natural by-product of cheese making that is often added back into the ricotta. This is a "no whey added" product that yields a pure, rich, and creamy ricotta. This is the same ricotta that we use in all of our products. "Impastata" ricotta is used for mixing and is perfect for recipes. It is also delicious when eaten alone or on crostini with a drizzle of local honey.
